Cranberry, Walnut, Goat Cheese Salad with Mixed Baby Greens
I love this salad when my lettuce crop is overflowing! The flavor combination of walnuts, goat cheese and cranberries with the incredible vinaigrette is delightful!
• 6 cups of baby greens ( spring mix lettuce)
• 1 cup of crumbled goat cheese
• 1 cup of toasted walnuts
• 1 cup of dried cranberries
• 1 shallot, minced
• 1 tsp of dijon mustard
• 2 tsp of red wine vinegar
• 1/4 cup of extra virgin olive oil
• 1 tsp of sugar
• 1 Tbs of honey
• salt and pepper to taste
Start by combining all of the dressing ingredients (a mason jar with a lid is quite handy) and shake well. Next, toast the walnuts in a dry skillet on medium high heat for 4 – 5 minutes, stirring frequently. Place the lettuce in a large salad bowl and sprinkle over the crumbled goat cheese, cranberries and walnuts. Pour the dressing over the top and toss!
