Applesauce

The perfect applesauce recipe! This is what I grew up with and I think you’ll love it as much as I do, its the perfect blend of sweet, tart and spiced! Use a mildly tart apple, then add in the brown sugar at the end to your liking. I also use a few plums, they add another flavor dimension.

Ingredients:
Serves 10 – 12

  • 8 mildly tart apples, peeled, cored and cut into chunks
  • 4 red or black plums, peeled and rough chopped
  • 1/3 cup of apple cider or apple juice
  • 1 cinnamon stick
  • dash of nutmeg
  • 3 strips of lemon peel
  • 4 – 5 Tbs of brown sugar or to taste

Directions:

In a large, heavy saucepan or stockpot, add the apples, plums, cider, cinnamon stick, nutmeg, and lemon peel. Bring to a boil, then reduce the heat and simmer for 30 – 40 minutes, mash with a potato masher for a smoother consistency or just keep it chunky. Taste and add in the brown sugar, 1 Tbs at a time until you have the desired sweetness.

Note to cooks: Varieties of apples that are used in applesauce are: Jonathan, Jonagold, Braeburn and Prima
