Bacon Wrapped Halibut

DSC05552This Halibut is out of bounds! It’s marinated in a maple/soy mixture, wrapped in bacon and broiled! Super simple and just absolutely delicious!

       Ingredients:
       Serves 4

  • 4  halibut filets
  • 1/2 cup of maple syrup
  • 1/4 cup of soy sauce
  • 1 1/2 Tbs of Dijon mustard
  • 2 cloves of garlic, smashed and chopped
  • 1/2 tsp of ground black pepper
  • 8 pieces of thick cut bacon
  • 1 heaping Tbs of fresh thyme leaves

Directions:

Stir together the maple syrup, soy, Dijon, garlic, and pepper in a small bowl. Place the fish in a shallow dish and pour over the marinade, let sit for at least 30 minutes, turning a few times.DSC05531DSC05534While the fish is marinating, cook the bacon in a large skillet for 3-4 minutes, it should just start to turn brown and still be pliable. Then pat dry.DSC05538Soak several toothpicks in water, remove the fish from the marinade and pat dry, reserve the marinade, place in a saucepan and bring to a boil, reduce heat and cook for 3-4 minutes, this will be your sauce for drizzling on the fish. To assemble, place the fish on a small baking sheet covered with foil, sprinkle some fresh thyme on each filet and then wrap each one with 2 pieces of bacon, securing it with toothpicks.DSC05541Turn the broiler to high and broil the fish on the first side for 5 minutes, carefully flip it over and broil for 5 more minutes, the bacon will be crisp and the fish will be perfectly cooked. To serve, plate the fish and drizzle on a little of that crazy good sauce! Bon Appetit!DSC05552Note to cooks: If you prefer not wrapping the fish in bacon, you could broil the fish without the bacon on the first side for 5 minutes, flip it over and just drape 2 pieces of bacon over the top of the fish and broil for 5 more minutes, same taste and easier than wrapping.
