Baked Beans

Everyone needs a perfect baked bean recipe. This is my version for that classic, sweet and smokey summer side that I think is simply the best! It starts with bacon, how can you go wrong?

Serves 6

• 1 – 28 oz can baked beans, plain variety
• 1 – 15 oz can of black beans, drained
• 4 bacon slices
• 1/2 of a medium onion, chopped
• 1/3 cup of green pepper, chopped
• 1 Tbs of Worcestershire sauce
• a dash of liquid smoke
• 2 Tbs of brown sugar
• 1 Tbs of Dijon mustard
• 1 Tbs of molasses
• 1/3 – 1/2 cup of bbq sauce
• 1/2 tsp of kosher salt
•1/2 tsp of black pepper


Drain the black beans in a colander. Drain off most of the sauce from the canned baked beans.
In a heavy skillet, cook the bacon until crisp, remove, drain on a paper towel and crumble. Drain off most of the bacon drippings, leaving just enough to coat the skillet. Add the onions and green pepper to the skillet, saute over medium heat for 2 minutes.
In a medium sized casserole dish, add the beans, sauteed onion and green pepper, bacon and all of the remaining ingredients. Mix well. Bake at 350° for 1 hour. Let sit for 20 minutes or so before serving, or make early in the day and reheat. The best baked beans ever!
