Bechamel Sauce

Bechamel is a classic, delicious white sauce that is in so many dishes. It’s found in croque monsieur, lasagna, mac & cheese, it’s great over biscuits and delicious over cauliflower! A must to have in your recipe file.


• 5 Tbs of butter
• 4 Tbs of all purpose flour
• 4 cups of whole milk
• 1 large bay leaf, optional
• 2 tsp of salt
• 1/2 tsp of freshly grated nutmeg


In a medium saucepan over low heat, melt the butter, add flour and stir until smooth. Increase the heat to medium and cook the mixture until it turns a light golden color, about 6-7 minutes.
Meanwhile, heat the milk in another saucepan and bring to a boil, add the hot milk to the butter 1 cup at a time, whisking continuously until very smooth. Add the bay leaf and bring to a boil and cook for 10 minutes. Remove from the heat and season with salt and nutmeg. Discard the bay leaf.
