Corn and Black Bean Salad
A perfect summer salad using fresh corn and tomatoes! Healthy and truly delicious, perfect with grilled meats!
• 1/3 cup of canola oil
• 1/2 cup of red wine vinegar
• 2 tsp of sugar
• 1 tsp of paprika
• 2 tsp of cumin
• 1 tsp of kosher salt
• 1/4 tsp of freshly ground black pepper
• 4 ears of corn
• 1 medium tomato, chopped
• 1 can of black beans, drained and rinsed
• 4 green onions, white and green parts, chopped
Start by cutting the kernels off of 4 ears of corn.Place the corn in a heavy skillet with 1/2 cup of water, 1 tsp of salt, 1/4 tsp pepper and 1/2 tsp of sugar.Bring to a boil, then simmer for about 15-20 minutes until the corn is tender and the water is absorbed.
Meanwhile make the dressing: In a large bowl, whisk together the oil, red wine vinegar, sugar, paprika, cumin, salt and pepper.
Now add in the corn, tomatoes, black beans, green onions and cilantro.
Mix well, chill for at least an hour. This salad just gets better and better!
