Crispy Baked Chicken Wings

I don’t know anyone who doesn’t love chicken wings, but we can’t just chow down on fried wings very often! So try this method for baking them, the baking soda removes moisture and the wings become super crispy while baking! Douse the wings in my Carolina sauce and dig in! 

Serves 2 – 3

• 2 lbs of chicken wings
• 1 Tbs of baking powder
• 1 tsp of kosher salt
• 1 tsp of garlic powder

Carolina Sauce

• 1/4 cup of yellow mustard
• 2 Tbs of cider vinegar
• 2 Tbs of brown sugar
• 1/8 tsp of garlic powder
• 1/4 tsp of liquid smoke
• 3 tsp of mustard powder
• 1 tsp of hot sauce
• 1/2 tsp of Worcestershire sauce
• 1/4 tsp of kosher salt
• 1/4 tsp of black pepper
• 1 Tbs of butter


Pat the wings very dry with paper towels, if you have time, place them on a baking sheet and refrigerate uncovered for 2-3 hours, this is an optional step. Then, place the wings in a large ziploc bag, stir together the baking powder, salt and garlic powder and add it to the wings, toss and massage to coat.Arrange them on a baking sheet lined with foil and sprayed with cooking spray.
Bake them in a 275° oven for 20 minutes, adjust the temperature to 425° and bake the wings for 40 – 45 more minute, until they are nicely browned. While the wings are baking, make the sauce, just mix all ingredients, except the butter in a small saucepan over medium heat, stir and cook for 3 minutes. Place the wings in a large skillet, cast iron if you have one, pour in the sauce, add in 1 Tbs of butter, stir well to coat and cook for just a few minutes. 
Ready to dig in, super crispy, amazing sauce, no frying!

Note to cooks: You can also use your favorite sauce for these wings, bottled wing sauce, bbq sauce, etc.
