Cucumber Cups with Feta, Dill and Pomegranite

DSC01053These little cuties are so festive on the holiday table, they look like Christmas! So refreshing, delicious, and a snap to make!

Ingredients:
Makes 8 cucumber cups

• 1 large cucumber, cut off both ends, peel and cut into 2 inch chunks
• 3 oz of feta cheese
• 3 tsp of sour cream
• 1 1/2 Tbs of fresh dill, finely chopped
• 1/2 tsp of freshly ground black pepper
• 2 Tbs of pomegranate seeds and a few more for garnish

Directions:

Using a small spoon, scoop out most of the flesh in each cucumber chunk, trying not to go through the bottom.

DSC01044Mix together the feta and sour cream, mashing the feta with your fork, til fairly smooth then add the dill, pepper and pomegranate seeds and stir til combined. Fill the cucumbers and sprinkle a few pomegranate seeds on top for color.Chill and serve!
