Dutch Baby (Puffed Apple Pancake)

If you haven’t had a dutch baby, you’re in for a real treat! It is simply the best pancake you’ll ever eat! I hesitate to call it a pancake, it’s puffy and custardy in the middle, a little crispy on the outside and baked with apples and cinnamon! Commonly baked in a cast iron skillet, but you can also use a baking dish, no matter how you bake it, it will be outstanding!

Ingredients:
Serves 4

• 1 cup of whole milk
• 4 eggs
• 3 Tbs of sugar
• 1 tsp of vanilla extract
• 1/2 tsp of salt
• 1/4 tsp of cinnamon
• 2/3 cup of flour
• 4 Tbs of butter
• 2 apples, peeled, cored and thinly sliced (fuji, gala, pink lady)
• 3 Tbs of brown sugar
• powdered sugar for serving
• maple syrup for serving

Directions:
Preheat oven to 425°

Whisk the milk, eggs, sugar, vanilla, salt, and cinnamon in a large bowl until well blended.
Add the flour and whisk until the batter is smooth. Place the butter in a cast iron skillet or a 13 x 9-inch baking dish. Place in the oven until the butter melts. Remove from the oven and arrange the apple slices in a circle for a skillet or in rows for a baking dish. Return to the oven and bake for about 12 – 15 minutes. Now pour the batter over the apples and sprinkle the brown sugar on top. Bake for about 20 minutes until puffy and lightly browned.
Sprinkle with powdered sugar and serve with warm maple syrup.YUM!
