Fresh Peach Pie

I can’t imagine summer without a peach pie! This pie has a delicious streusel topping and I made a homemade crust! But a store bought one will do nicely.

One crust pie dough:
1 1/4 cups all purpose flour
1/2 tsp salt
10 Tbs well chilled unsalted butter
3-5 Tbs very cold ice water

Peach filling:
3/4 cup all purpose flour
1 cup sugar
1 tsp vanilla
1/4 tsp almond extract
1 Tbs lemon juice
1 tsp cinnamon
1/4 tsp nutmeg
10 peaches, peeled and sliced

Streusel topping:
3/4 Cup brown sugar
3/4 cup flour
1/2 cup oats
1/4 tsp salt
1/2 cup softened butter


In a food processor, pulse together the flour and salt, add butter and pulse til the mixture forms pea sized pieces.DSC04166Slowly add in the ice water, 1 Tbs at a time til dough holds together. Turn out onto waxed paper, shape into a ball and then flatten into a disc.DSC04178Refrigerate for 1 hour. It’s that easy! Or just use a store bought crust.
Mix together all of the filling ingredients in a large bowl, stir well to coat the peaches.DSC04184Roll out the pie dough and place it in a pie plate. Trim the edges and crimp. Add in the peaches.DSC04189
Make streusel topping: mix together the brown sugar, flour, oats and salt. Add in the butter and combine well, it will be sticky, scatter over the peaches.DSC04207 Bake 400 for 30 minutes, reduce heat to 375 and bake for another 45 minutes to an hour, if it becomes too brown, cover with foil for the last 15 minutes or so. Serve this beauty with ice cream or frozen yogurt!

*The streusel and the crust can be made 1 day ahead, cover and store in the fridge, bring to room temp before using.

    Beautiful. I’m just going to look at the pictures of this pie because if I made it, I would not be able to restrain myself! Love the streusel topping. As a kid, we would pick bushels of peaches and my sister and I would help Mom can peach slices, make peach butter, and of course pies! Opening those jars in the winter was always a treat. Really enjoying your recipes!
