Grilled Pork Tenderloin Kabobs

This is a seriously good recipe, the pork tenderloin is marinated overnight in cola, brown sugar, rum, and honey then skewered and grilled with bacon, sage leaves, and bread! The bacon bastes the pork and the bread absorbs all the goodness!

Ingredients:
Serves 4

Marinade
• 1/2 cup cola
• 1/2 cup brown sugar
• 1/2 cup honey
• 1/2 cup Rum

• 1 pork tenderloin
• 1 Baguette – cut into 20 -3/4 inch cubes
• 3 slices of bacon cut into 16 pieces – 3/4 inch
• 20 large sage leaves
• 3 Tbs olive oil
• 3/4 tsp salt
• 1/4 tsp black pepper
• 1/2 tsp smoked paprika

Directions:

Mix all marinade ingredients in a bowl, stir until dissolved.  Pour into a large ziplock bag and place the pork in the bag.
Refrigerate overnight. Remove the pork from the marinade and rinse the meat. Let sit at room temperature at least 30 minutes.
Cut the pork into 1 inch cubes. Thread the skewers:  Alternate, pork, bread, bacon, and sage leaves.
Prepare the grill, grease the grill rack and place the skewers over high heat about 4 minutes per side. Quick, easy and scrumptious!
