Grilled T-Bone Steaks with Onion, Mushroom and Blue Cheese Sauce

Is anything better than a grilled T-bone Steak? Yep, top it with this crazy good sauce! The characters are, onion, garlic, thyme, mushrooms, brandy, beef stock and blue cheese! How could it not be mindblowing!

Ingredients:
Serves 3-4

• 2 Tb of butter
• 1 onion, sliced
• 5-6 garlic cloves, minced
• 1 tsp of thyme
• 8 oz Shiitake or Portobello mushrooms, sliced
• 1/2 tsp of salt
• 1/2 tsp of pepper
• 1/3 C of beef consomme
• 1 Tbs of brandy
• 1/2 cup of Gorgonzola
• 3 or 4 T-bone steaks
• olive oil
• salt and Pepper

Directions:

Melt the butter in a heavy skillet over medium heat, add the onion, saute for about 15 minutes. Add the garlic and thyme, saute for 1 minute. Add mushrooms, salt and pepper, saute for 15 minutes. Add in the consomme and brandy, deglaze the pan, simmer and reduce by half, about 3-6 minutes. Remove from heat and stir in the Gorgonzola cheese. Prepare the grill, rub a little oil on the steaks, season with salt & pepper and grill to perfection (these were 1 1/4 inches thick and I grilled them for about 3 minutes on each side for medium rare)  Remove from the grill, tent loosely with foil and let rest for 10 minutes.
Plate the steaks and spoon on that amazing sauce!
