Iced Apple Cookies
The ultimate fall cookie! Packed with toasted walnuts, apples, raisins, and infused with spices and apple cider and then iced! You will love these cookies!
• 1 cup of walnuts
• 2 cups flour
• 1 tsp of baking soda
• 1 tsp of cinnamon
• 1/4 tsp of cloves
• 1/4 tsp of nutmeg
• 1/2 tsp of salt
• 1 1/2 sticks of unsalted butter, softened
• 1 1/3 cups of brown sugar
• 1 large egg, room temperature
• 1 cup of raisins
• 1 cup of apple, chopped, (red or golden delicious)
• 1/2 cup of apple cider
• 2 Tbs of softened butter
• 2 Tbs of apple cider
• 3 cups of powdered sugar
• 1 tsp of vanilla
Preheat the oven to 350°
Toast the walnuts in a dry pan over medium to high heat til fragrant, about 5-6 minutes.
In a medium bowl, stir together the flour, baking soda, cinnamon, cloves, nutmeg and salt.
In a mixer, cream the butter and sugar together til fluffy, add in the egg, beat well. Add in the flour mixture a little at a time, beat until well mixed.
Stir in the walnuts, raisins, apples and the apple cider.
Drop by heaping tablespoons on a parchment lined baking sheet, 2 inches apart.
Flatten them slightly with the back of a large floured spoon.
Bake for 20 -22 minutes. Cool on a wire rack.
For the icing, stir together the powdered sugar, vanilla, apple cider and butter til very smooth.
Drizzle over the cooled cookies. DELISH!
