Iron Skillet Blackberry Cobbler

DSC05485A July favorite at the cabin! Sweet fresh blackberries baked in a sweet, scrumptious batter, so easy to make, the batter is made in a cast iron skillet and the berries dropped on top, then just bake! Serve warm with vanilla ice cream! This is yet another delicious reason to get a cast iron skillet!

 Ingredients:

  Blackberries

  • 4 cups of fresh blackberries, rinsed and dried
  • 1/2 cup of sugar
  • 1/2 tsp of cinnamon
  • dash of nutmeg
  • juice from 1/2 of a lemon
  • 2 Tbs of flour

Batter:

  • 1 stick of butter
  • 1 1/4 cups of flour
  • 1 cup of sugar
  • 1 Tbs of baking powder
  • dash of salt
  • 1 1/4 cups of whole milk
  • turbinado sugar for sprinkling on finished cobbler (could also use granulated sugar)

Directions:
Preheat oven to 350°

Mix the berries with the sugar, cinnamon, nutmeg, lemon juice and flour.DSC05463Melt the butter in a 10 inch cast iron skillet, whisk together the flour, sugar, baking powder and salt, then add in the milk, whisk til well incorporated and pour over the butter in the skillet, do not stir.DSC05472 Then drop the berries in by the spoonful. Bake for 50 – 55 minutes, til light golden brown. Sprinkle generously with turbinado sugar. All done! Serve warm with vanilla ice cream or vanilla frozen yogurt! YUM!DSC05477DSC05480Note to cooks: This is best eaten warm, but if you want to make it earlier in the day, just reheat in a 350° oven for a few minutes before serving time.
