Marinated Mushrooms

I love marinated mushrooms and they are a snap to make! I always have these around for the holidays, I make them while herbs are still growing in my garden and make a large batch, they keep in the fridge for a month! Everyone loves these!

Makes 1 quart

  • 1/3 cup of red wine vinegar
  • 1/3 cup of extra virgin olive oil
  • 1 – 1/2 lbs of white button mushrooms, dirt brushed off
  • 5 garlic cloves, chopped
  • 1 tsp of salt
  • 1 shallot, minced
  • 3 Tbs of red bell pepper, finely chopped
  • 1 tsp of fresh basil, chopped
  • 1 tsp of fresh oregano, chopped
  • 1 tsp of fresh thyme, chopped
  • 1/2 tsp of sugar
  • 2/3 cup of water
  • 2 tsp of fresh lemon juice
  • 1/4 tsp of red pepper flakes for heat – optional


In a large saucepan, add all ingredients, stir and bring to a boil, reduce the heat to low and simmer for 6 minutes. dsc07452Ladle into a clean quart jar, place the lid on tightly and refrigerate overnight before serving.dsc07465
