Meatloaf – Best Ever!

 

This is my mother’s meatloaf recipe, I’ve been making this for years and I think it is simply the best! There are certainly variations, but for a go-to meatloaf recipe, this is the one! Absolutely to die for! The glaze is a mixture of balsamic vinegar, bbq sauce, brown sugar and butter that elevates it even more!

Ingredients:

Meatloaf:

  • 1 Tbs of olive oil
  • 1 onion, chopped
  • 1 small green pepper, chopped
  • 1 celery rib, chopped
  • 3 cloves of garlic, minced
  • 2 lbs of ground meat of your choice, beef, veal, pork, turkey or a combo
  • 2 Tbs of Worcestershire sauce
  • 1 cup of breadcrumbs
  • 2 eggs, beaten
  • 1 tsp of kosher salt
  • 1/4 tsp of black pepper
  • 2 tsp of fresh thyme or 1 tsp of dried thyme
  • 1/4 cup of fresh parsley, chopped

Glaze:

  • 1/4 cup of Balsamic vinegar
  • 2 Tbs of brown sugar
  • 1 cup of prepared bbq sauce
  • dash of salt & pepper
  • 2 Tbs of butter

Directions:
Preheat oven to 375°

In a heavy skillet over medium-high heat, add the oil and saute onion, green pepper and celery for about 5 minutes, until it starts to soften. Add in the garlic, saute 1 more minute. Turn off heat and let cool.
In a large bowl, combine ground meats, Worcestershire, breadcrumbs, eggs, salt, pepper, thyme and parsley. Add in the sauteed veggies and mix will with your hands.
Shape into one loaf or two smaller loaves. Place on a rimmed baking sheet or grill pan. Bake at 375° for one hour.
While the meatloaf is cooking, whip up the glaze. Combine all glaze ingredients in a small saucepan, simmer slowly until sugar is dissolved and butter is melted.
Brush on the glaze the last 15 minutes of baking and again when you take it out of the oven.
Let the meatloaf rest for about 15 minutes, cut into thick slices and drizzle with remaining glaze. Oh wow, this is good!
