St. Louis Pork Steaks

St. Louis Style Pork Steaks! The best! Start with the magic dry rub and refrigerate, then mix up the luscious sauce and grill to perfection! Make sure to use thick-cut pork steaks, enjoy!

Ingredients:
Serves 6 easily

• 4 – 5 thick cut pork steaks

Dry rub:

• 1/3 cup of brown sugar
• 1 tsp of garlic powder
• 1 tsp of onion powder
• 1 tsp of paprika
• 1/2 tsp of kosher salt
• 1/2 tsp of black pepper
• 1/4 tsp of cayenne pepper
• 1/4 tsp of dry mustard

Sauce:

• 1 bottle of bbq sauce
• 1 Tbs of brown sugar
• 
1 Tbs of Worcestershire sauce
• 1 tsp of liquid smoke
• 1 tsp of yellow or Dijon mustard
• drizzle of Cider vinegar

Directions:

Mix all of the dry rub ingredients together in a small bowl, place the pork steaks on foil lined baking sheets and sprinkle both sides with the dry rub. Press into the meat with your fingers.Cover with foil and refrigerate as long as you can, at least 3 hours. Bring to room temperature before grilling.
Meanwhile, make your sauce, add all sauce ingredients to a saucepan, stir and heat until combined.Prepare your grill for direct and indirect heat, so all coals will be on one side of the pit.
Place the pork steaks over direct heat and cook 4 minutes on each side, til nicely browned.Move the pork steaks to the cooler side, cover and cook for 25 – 30 minutes, (depending on the thickness, temperature should be 145°) turning just once, then slather with sauce, place them back on the hot side and cook just a minute on each side to caramelize the sauce.Remove them from the grill and place them in a large baking dish, pour over any remaining sauce, let rest for at least 10 minutes. Super yummy!
