This is classic pizza Margherita with the volume turned up!
A summertime treat when the tomatoes are ripe and juicy and the basil is abundant!
• 2 Tbs extra virgin olive oil
• 3 cloves garlic, chopped
• 2-3 thyme sprigs
• 2 large tomatoes, thinly sliced
• 1 pizza dough
• 1 cup Italian tomato sauce or pizza sauce
• 1 ball of fresh mozzarella, sliced
• 10 -12 whole fresh basil leaves
• salt & pepper
Preheat oven to 450°
To make this easy, start with a pre-made pizza dough from the grocery store or a pizzeria.
Start by heating the olive oil in a large skillet over medium heat, add the garlic and thyme sprigs, heat until they become aromatic, just a few minutes.Turn off the heat and place the tomatoes in the skillet, turning to coat with the oil, sprinkle with a little salt and pepper and let rest.Oil a pizza stone or a baking sheet, place in the oven to heat it through.
Get your dough ready, stretch it out and shape it into a 9 x 15 rectangle. Remove the baking sheet from the oven and place the dough on it. Bake it for 12 minutes so, remove from oven and spread the tomato sauce thinly over the entire surface. Place the tomatoes over the sauce, add the basil leaves and top all with the mozzarella. Drizzle over the olive oil and garlic from the skillet, discard the thyme sprig. Bake for another 10 minutes til the cheese is melted and bubbly! Enjoy! The flavor is unbelievable!
