Salmon Burgers

This is the best Salmon burger I’ve ever had! It has a crispy crust, a sweet maple glaze, and a glorious dill spread! Oh and bacon! Absolutely mouthwatering! This definitely will be on the top of your burger list! I cooked these in my cast iron skillet, but they would be great on the grill also!

Ingredients:
Makes 2 very large burgers or 4 smaller ones

         Dill Spread

  • 3 oz of plain Greek yogurt
  • 1 oz of cream cheese, softened
  • 1 heaping Tbs of fresh dill, chopped
  • 1 large garlic clove, grated or finely minced
  • pinch of salt

         Salmon burgers

  • 1 lb of salmon, skin removed
  • 1/2 cup of Panko bread crumbs
  • 1 egg white
  • 1 tsp of smoked paprika
  • 1/4 tsp of onion powder
  • 1/4 tsp of granulated garlic or garlic powder
  • 1/4 tsp of kosher salt
  • 1/4 tsp of pepper
  • 1 Tbs of flour
  • 4 pieces of thick cut smoked bacon
  • whole wheat burger buns
  • baby greens
  • 1 tomato, slicedMaple Glaze 
  • 1/2 cup of pure maple syrup
  • 2 Tbs of grainy mustard

    Directions:

Cook the bacon in a large heavy skillet til crispy, remove and set aside. Reserve the bacon grease. To make the dill spread, just mix all spread ingredients in a small bowl and refrigerate.DSC04894Now, mix up your burgers. Using a very sharp knife, chop the salmon into small pieces and place it in a medium size bowl. Add in the remaining ingredients through the pepper and mix until well combined. Shape the salmon mixture into two large patties or 4 smaller ones.DSC04890DSC04892Sprinkle the patties with flour and press firmly with your fingers.DSC04899Stir together the maple syrup and the mustard. Put your buns in the oven to warm at 350° for 5 minutes or so.DSC04897Now it’s time to cook the burgers, remove all but 2 tsp of bacon grease from the skillet, turn the heat on high and heat until very hot. Add in the patties, cook on the first side for 4 minutes.DSC04900 Turn, glaze and cook for 4 more minutes. Turn again, glaze and cook for 2 minutes, turn again, glaze and cook for 2 more minutes or until the patties are beautifully glazed and browned. So that’s about 12 minutes total cooking time. (you may have to turn the heat down a little for last 4 minutes of cooking time)DSC04903To assemble, spread the top and bottom buns with a generous amount of dill spread, then place the lettuce, tomato, bacon and the burger on the bottom bun and put the lid on. Bite into that! You’ll see why I said it’s the best salmon burger I’ve ever had!
