I adapted this recipe from a Mayonnaise ad. It is insanely good, the shrimp are luscious and it’s super quick! The sauce is incredible with apricot preserves, soy, dijon, garlic and ginger!
Serves 2 hungry people!
- 1 lb of shrimp, shelled and deveined
- 2 lemons, each cut into 8 pieces
- chopped green onions for garnish
- 1 cup of Mayonnaise
- 1/4 cup of apricot preserves
- 2 Tbs of soy sauce
- 2 tsp of Dijon mustard
- 3 garlic cloves, minced
- 1/2 tsp of ground ginger
Mix all sauce ingredients in a medium bowl.
Skewer the shrimp ( in two places ) and the lemon wedges and brush liberally with the sauce (reserve some for the finished shrimp)Grill for about 2 minutes on each side until the shrimp turn pink, do not overcook.Sprinkle with chopped green onion. Serve with reserved sauce. Delicious over Basmati rice!
