Shrimp Salad Sandwiches
This shrimp salad is the best I’ve ever had! I like to start with fresh shrimp and boil them using Old Bay seasoning. I think it brings a lot of flavor to the recipe and I love the smell of the shrimp cooking! Serve on a toasty sub roll with lettuce and tomato. Delish!
Makes 2 large sandwiches
• 1 lb of shrimp, shell on
• 2 Tbs of Old Bay seasoning
• 2 stalks of celery with leaves, finely chopped
• 1/4 tsp of onion powder
• 1/4 tsp of celery salt
• salt and pepper to taste
• juice of 1/2 of a lemon
• 2 whole wheat sub buns, cut in half
• lettuce leaves
• 1 tomato, thinly sliced
Start by cooking your shrimp, bring 1 cup of water and 2 Tbs of Old Bay seasoning to a boil. Add in the shrimp, cover and cook just 2-3 minutes until the shrimp turn pink.Drain and cool. Peel the shrimp and cut into small pieces.Place in a large bowl. Add the mayonnaise to the shrimp, then add the celery and leaves, sprinkle in the onion powder, celery salt and salt & pepper. Squeeze in the lemon juice.Stir to combine, taste and add salt if needed. Chill for about an hour.
Butter or spray the buns with olive oil spray and toast the bread for just a few minutes under the broiler. Assemble the sandwiches: place the lettuce on the bottom bun, spoon on the shrimp salad, then the tomato, put the top on and serve!
