Smoked Salmon Crostini

DSC08755If you like smoked salmon, you’ll love these tasty little Crostini! They are perfect for entertaining, but also make a great light dinner served with a fresh fruit salad.

Makes 10 Crostini

  • 1/4 cup chopped fennel bulb
    2 Tbs of chopped green onions
    1/2 Tbs of extra virgin olive oil
    1  1/2 tsp chopped fresh dill
    1/2 tsp grated lemon zest
    2 tsp of fresh lemon juice
    1 tsp of capers
    1 tsp freshly ground black pepper
    generous dash of garlic powder
    6 oz of cold-smoked salmon, cut into small pieces
    10 (1/2-inch-thick) slices of a French bread baguette, I used wheat, toasted in a 450° oven for 10 minutes.
    1/4 cup of Alouette cheese, (a soft french spreadable cheese) sold in most supermarkets.
    1/2 of a large cucumber, very thinly sliced
    Fresh dill sprigs for garnish


  In a medium bowl, add the first 9 ingredients, stir to combine.

DSC08733Stir in the salmon.DSC08738Cover and refrigerate for 1 hour at a minimum.
Spread a little butter on the baguette slices and toast in a 450° oven for 10 minutes.
Then, spread some of the cheese evenly over each bread slice, top with the cucumber slices and then the salmon mixture, garnish with the fresh dill sprigs.DSC08747Irresistible!
