Spaghetti Carbonara

Classic, quick, delicious! Made with eggs, bacon, Parmesan, garlic and herbs, how can it not be amazing?!

Serves 4

• 5 slices of applewood smoked bacon, cut into small pieces
• 4 garlic cloves, minced
• 8 oz of spaghetti
• 1 cup of grated Parmesan cheese plus a little more for garnish
• 2 eggs
• salt and pepper to taste
• 2 -3 Tbs of fresh herbs, oregano, basil or parsley,  (I used oregano)


In a large skillet, over high heat, cook the bacon until almost brown and crispy. Add in the garlic, cook another minute.
Turn off the heat. Cook the pasta in salted water until al dente, drain, keep warm and reserve 1/2 cup of the cooking water.
Whisk together the freshly grated Parmesan and the eggs. In the skillet with the bacon, turn the heat to high and add in 1/4 cup of the pasta water, heat thru then turn off the heat.Working quickly, add in the pasta and the egg mixture, stir until well combined. Add another 1/4 cup or so of the pasta water to get the desired consistency, creamy. Season with salt and freshly ground black pepper. Place the pasta in a large bowl and sprinkle on more Parmesan and your choice of fresh herbs like oregano, basil or parsley. Serve with warm crusty bread!
