Spectacular Chorizo Dip!

Ok tailgaters, take this to your next party, your friends will go wild! Get some good Chorizo from the butcher, they make it fresh! So simple and so delicious!


  • 2 Poblano chiles
  • 1 Tbs of olive oil
  • 8 oz of fresh Chorizo sausage
  • 1/4 tsp of onion powder
  • 1/4 tsp of garlic powder
  • 4 cups of shredded or cubed Monterey Jack Cheese
  • taco chips


In a cast iron skillet, over high heat, roast the Poblanos until charred and softened it takes between 10 and 15 minutes.Place in a bowl and cover with plastic wrap for 5 minutes.Then just peel the skins off and remove the stem, seeds and veins. Slice lengthwise into 1/2 inch strips and shred or cut the cheese into chunks. Preheat oven to 350°. Heat the oil in a heavy skillet over high heat, add the Chorizo and the onion and garlic powder, cook until browned, about 10 -12 minutes.Combine the Poblanos and Chorizo in a 1 1/2 qt casserole dish.Toss well, then add the cheese, stir to combine.Cover with foil and bake for 20 minutes, remove the foil and broil for 3 minutes. Serve with taco chips.DSC08534
